Tamale Pie Recipe
Ingredients:
1 pc of onion (medium); chopped
12 oz of tomatoes; chopped
2 lbs of beef (ground)
1/2 tsp of pepper (black)
1/2 tsp of oregano
3-1/2 oz of chilies (green)
1/2 tsp of salt
1 pc of garlic clove; chopped
For the Topping:
1/2 c of cornmeal
1 c of grated cheese (mild)
1/2 c of flour (unbleached)
1 tsp of baking powder (Calumet)
2 tsps of sugar (refined)
1/2 c of milk
2 tsps of oil
1/16 tsp of salt
Halved chilies (green)
Instructions:
Cook the meat inside a skillet till browned. Add tomatoes, onion, garlic, salt, pepper, oregano, and chilies; stir them well. Let it simmer for 20 mins. Pour onto a 4-quart casserole and top it with the cheese.
Combine cornmeal, flour, baking powder, salt, oil, sugar, milk, and halved chilies; mix them well then pour onto the cheese. Place inside the oven and bake (375 degrees F) for half an hour till topping has cooked through.
