Spanish Rice Recipe
Ingredients:
1-1/2 c of rice
3 tsps of shortening
1/2 c of sliced onion
1/2 c of sliced bell pepper
14 oz of canned tomatoes (whole)
1 pc of garlic clove (medium); chopped finely
1 tsp of pepper (black)
3 c of water
2 tsps of salt
Instructions:
Melt the shortening on a skillet then add the spanish rice; cook till golden. Reduce the heat then add tomatoes, bell pepper, pepper, onion, and garlic; mix thoroughly then cover (warm) water. Add the salt and cover. Let it simmer till almost dried.
Gradually add the rest of the water and continue to cook above gentle heat till fluffy.
