Sopa De Aguacate Recipe
Ingredients:
4 Tbsps of shortening
3 pcs of avocados (medium-sized); mashed
1 Tbsp of flour
1/3 c of cream
1/4 c of onion; chopped
1/2 c of tomatoes (fresh); peeled then drained
Food color (green)
3 pcs of tortillas (or 3 pcs of bread slices)
4 c of stock
1/8 tsp of salt
1/8 tsp of pepper
Instructions:
Heat a tablespoon of shortening on a pan then add flour; blend thoroughly till browned. Add tomatoes with onion; let it boil till mixture has reduced into half. Season salt & pepper then add stock; let it simmer for 10 mins.
Place the (mashed) avocados inside a (soup) tureen then add the cream; mix thoroughly. Add little food color and the stock then stir thoroughly. Serve at once with (tortilla) croutons.
Croutons: Cut the tortillas to little squares an fry in 3 tablespoons of shortening till golden and crisp.
