Salsa De Tomate Recipe
Ingredients:
1 pc of onion; chopped
1/2 Tbsp of parsley (fresh); chopped
2 lb of tomatoes (very ripe)
2 Tbsps of oil (olive oil)
1 pc of garlic clove
1 c of stock (beef)
1 pc of crumbled bay leaf
1 tsp of sugar (refined)
1/4 tsp of thyme
1 Tbsp of oregano
Salt (to taste)
Optional:
12 pcs of olives (green) pitted then sliced
Instructions:
Singe tomatoes above a flame; peel then chop. Heat the oil then saute garlic clove and onion till onion becomes translucent and soft. Discard the garlic then add stock, tomatoes, (bay) leaf, oregano, parsley, sugar, and thyme; season with salt. Cook till slightly thick. Add olives if desired.
