Salsa Borracha Recipe
Ingredients:
5 oz of tomatillos; remove the husks
1 pc of bay leaf; broken to pieces
2 to 3 pcs of chiles (Pasilla); seeded, stemmed, then broken to bits
1 pc of garlic clove; chopped finely
1 Tbsp of oil (cooking oil)
1/4 c of beer
1/2 Tbsp of vinegar (rice wine)
1/2 tsp of oregano
1 oz of cheese (Cotija or Anejo); grated
1/4 tsp of salt
Instructions:
Cover water on tomatillos and simmer for 5 to 10 mins till very tender; transfer on blender. Cover water on chiles and simmer, about 15 mins; drain then place on blender with tomatillos. Add beer, garlic, oil, oregano, salt, (bay) leaf, and vinegar; pulse for 10-15 times till all are chopped well, but don’t turn it to a puree. Add cheese and stir thoroughly then serve.
