Pollo con Queso en Tortilla Recipe
Ingredients:
1/2 c of shortening
3/4 c of water
1 tsp of salt
A can of cream-of-chicken soup
2 c of grated cheese (Monterey-Jack)
4 oz of chopped chiles (green)
2 c of flour
4 c chicken; cooked & cut-up
3/4 tsp of baking-powder
1 c of dairy sourcream
1/2 c of finely-chopped onions
1/4 c of sliced onions with tops (green)
Instructions:
Combine salt, baking-powder & flour. Blend shortening in ’til mixture appears to be finely crumbled. Gradually pour water in ’til dough separates from bowl’s sides & is easy to handle.
Transfer into floured working surface then knead for 10-12 times ’til smoothened. Have it covered then set aside for about 15 mins.
Pat & roll into 20×13-inch rectangles then fold them crossways onto thirds. Arrange them on unoiled 11×7x2″ bake dish then unfold your dough.
You spread meat all over the dough then have it heated at 400-degrees F. Meanwhile, mix the soups, chiles, onions & sourcream in saucepan then have it heated over mid-fire, stir often ’til heated through.
Pour this mixture into chicken then sprinkle w/ green-onions & cheese. Have the dough folded over the filling into center then pinch ends in order to tightly seal. You cut small slits above then bake for 45-50 mins ‘ttil crust is golden-brown.
