Natillas Recipe
Ingredients:
4 large eggs
1/8 tsp of salt
3/4 c of sugar
Nutmeg
1 qt of milk
1/4 c of flour
Instructions:
Combine flour,1 c milk & yolks, mix ’til paste-like in consistency. In saucepan, you add salt & sugar into rest of milk then scald over mid-heat. Add yolk-mixture in then continue cooking at mid-heat ’til it appears to be like a softened custard.
You remove the pan from the heat & cool mixture at room-temp. Have eggwhites beaten ’til stiff then fold it into custard then chill. Place spoonfuls of custard in serving platters then sprinkle w/ nutmeg prior to serving.
