Mexican Burrito Recipe
Ingredients:
1 lb of lean beef (ground)
1 pc of onion (small); chopped
1/2 tsp of salt
1 pc of garlic clove; crushed or minced
1/4 tsp of pepper (black)
1/4 tsp of cumin (ground)
1/2 tsp of chili powder
10 oz of spinach (frozen, chopped); thawed then drained
1.5 c of cheese (Monterey Jack)
4 pcs of tortillas (flour, large); warmed
Slices of lime (fresh)
Slices of pepper (jalapeno)
1 c of salsa (chunky)
Instructions:
Cook beef, garlic, and onion on a non-stick skillet above moderate heat till meat is browned or for 8-10 mins; stir occasionally. Drain off fat then add powdered chili, salt, pepper, and cumin on beef. Add spinach; stir thoroughly till heated through. Take out from heat then add cheese.
Place mixture equally among tortillas and fold burrito-style, fold an edge and roll opposite the folded side to seal. Garnish jalapeno and lime slices then serve at once with salsa.
