Ingredients:
2 & 1/2 lbs of tripe
1/3 c of vinegar
2 garlic cloves
1/2 Calf’s-foot
Cooled water
1/2 of onion (small)
Salt
3 qts of water
1 & 1/2 c of Hominy
1 c of canned chile-sauce (red)
Leaves of cilantro; chopped
Finely-chopped onions (green)
Lemon slices
Heated corn-tortillas
Instructions:
Remove excess tripe fat, Cut it into 1″ squares then place into bowl w/ calf’s-foot. You add the cooled water & vinegar, enough to have it covered. Stand for 3 hrs.
You then thoroughly rinse the tripe & calf’s-foot then transfer into large-sized pot. You add the onions & garlic. Pour enough water to have ingredients covered plus 1&1/2-inches more. Season w/ salt.
Allow to slowly boil then reduce the heat. Have it simmered w/ cover for 6 hrs ’til tripe becomes tender. An hour after, skim off foam right from the soups surface. Skim as necessary, adding more liquid if needed.
You add the red-chili sauce & hominy one hour before cooking ends. Ladle dish into bowls then served w/ cilantro, onions, sliced of lemons & heated tortillas.
