Frijoles Rancheros Recipe
Ingredients:
8 slices of bacon; cut-up
2 garlic cloves; finely-chopped
1/4 c of beer
Ground chiles (red)
6 ounces of tomato-paste
2 Jalapenos; seeded & chopped
1 c of chopped onions
1 Tbsp if vinegar
32 ounces of beans (pinto); drained
Instructions:
Have oven preheated to three hundred seventy-five degrees Fahrenheit. Have your bacon cooked in skillet ’til crisp & then add the onions, garlic & Jalapenos. Stir while cooking ’til onions are tender. Drain of excess oil.
Combine bacon-mixture w/ the rest of the ingredients and place in ungreased 2-qt casserole. Have dish baked for 45 mins w/o cover, stir once ’til beans turn bubbly & hot.
