Chiles Rellenos Recipe
Ingredients:
12 pcs of mild chiles w/ stems (large, green)
1/2 lb of cheese (Jack); cut to long and narrow strips
For the Batter:
1 c of flour (all purpose)
1 tsp of baking powder (Calumet)
1/2 tsp of salt
1 c of buttermilk
3/4 c of cornmeal (yellow or white)
2 pcs of eggs; beaten slightly
Instructions:
Parch the chiles and peel them, but leave the stems. Cut a little slit just below its stem and remove the seeds; carefully insert a strip of cheese without splitting the chile. Combine flour, salt, and Calumet; mix thoroughly and add the cornmeal. Combine buttermilk with eggs; add onto the flour mixture then blend them well.
Moisten the chile and dip on flour and into the batter. Fry till golden. Place on a paper towel, drain excess oil. Serve at once.
