Chile Con Queso Recipe
Ingredients:
5 Tbsps of oil (peanut oil)
1 pc of onion (medium); sliced thinly
1 pc of tomato (medium); skinned and sliced thinly
3/4 c of milk (whole)
1/2 lb of cheese (Muenster or mild Cheddar); sliced thinly
3 Tbsps of water
1-1/2 tsps of salt
20 pcs of fresh chiles (green); roasted then peeled
Instructions;
Cut roasted chiles into strips, but do not take out seeds. Place oil on a pan above moderate heat. Cook onion till soft but not brown then add slices of tomato and chiles. Cover then cook them for 8 mins.
Add water then milk; cook mixture for some more mins. Add cheese and little salt. Serve when cheese has melted.
