Chilaquiles Recipe
Ingredients:
4 pcs of tortillas (corn)
6 pcs of eggs
2 pcs of avocados; halved and pitted
2 pcs of tomatoes; sliced
4 Tbsps of juice (lime)
4 tsps of oil (olive oil)
Salt & Pepper (to taste)
2 Tbsps of butter (or margarine)
2 pcs of onions; diced finely
1 c of cooked meat (beef, pork or chicken); diced or shredded
1/2 tsp of cumin (ground)
1 tsp of chili powder
Cilantro
Instructions:
Break eggs inside a bowl; beat lightly. Slice and cut tortillas to eighths then add onto eggs; allow to sit for 15 mins. Scoop out flesh of avocado in one piece; slice then fan out slices onto each serving dish then arrange slices of tomato next with avocado.
Sprinkle over oil with (lime) juice then sprinkle salt & pepper. Place butter on a skillet above moderate heat till melted; add onion, cumin, and powdered chili. Cook for 5 mins, while occasionally stirring.
Add in the meat then cook till just warmed through; add in the mixture of egg and stir thoroughly till eggs have cooked through. Arrange mounds of mixture onto each serving dish next with the tomato and avocado.
Serve at once; garnish cilantro.
