Chi-Chi’s Sweet Corn Cake Recipe
Ingredients:
1/2 c of softened butter
1/3 c of flour (Masa Harina)
1/4 c of water
1/4 c of cornmeal
1-1/2 c of corn (frozen); thawed
1/3 c of sugar (refined)
1/4 tsp of salt
2 Tbsps of cream (heavy)
1/2 tsp of baking powder
Instructions:
Preheat the oven (350 degrees F). Beat butter inside a bowl till creamy then add water and flour; beat thoroughly till blended well. Place corn inside a processor; pulse till chopped coarsely then add onto mixture of butter. Add in cornmeal and blend thoroughly.
Combine sugar, salt, (baking) powder, and cream inside a bowl; blend thoroughly and add onto mixture of butter. Mix them using clean hands. Pour mixture onto an 8-inch baking square pan then cover with foil. Put the filled pan above a bigger pan that has been filled with (hot) water up to a third of pan.
Bake inside preheated oven for 50 to 60 mins. When done, take out from oven; let it stand for 10 mins. Serve.
