Chi Chi’s Margarita Marinade Recipe
Ingredients:
1/4 c of juice (orange)
1/4 c of oil (vegetable oil)
1/4 c of Tequila
2 Tbsps of juice (freshly squeezed lime)
1 Tbsp of honey (pure)
1 tsp of garlic (fresh); minced or crushed
1 tsp of lime zest; grated
1-1/4 c of tomatoes (diced) & green chilies (canned); drained
2 lbs of meat (beef or pork tenderloin, chicken breast, or flank steak)
Instructions:
Combine diced tomatoes & green chilies, orange juice, oil, tequila, lime juice, honey, garlic, and lime zest inside a Ziploc bag; mix thoroughly. Add the preferred meat and seal; turn till coated thoroughly. Refrigerate for eight hrs or for over a night, turn occasionally.
Preheat the broiler. Take the marinated meat out then place inside the pan and broil, 7-8 inches away from the heat, till done. Boil the marinade for a min. Serve the marinade along side the cooked meat.
