Chi-Chi’s Baked Chicken Chimichangas Recipe
Ingredients:
2 Tbsps of oil (olive oil)
2.5 c of chicken (cooked); shredded
1/2 c of chopped onion
2 pcs cloves of garlic; crushed or minced finely
1/2 Tbsp of chili powder
2 c of salsa
1/2 tsp of ground cumin
1/2 tsp of cinnamon (ground)
1/8 tsp of salt
6 pcs of tortillas (flour, 10-inch); warmed
1 c of beans (refried)
Oil (olive oil, for basting)
Guacamole
Sour cream (dairy)
Instructions;
Saute garlic and onion with oil on a saucepan till tender. Add powdered chili, cumin, cinnamon, and salsa; stir thoroughly then add chicken. Allow to cool. Preheat the oven at 450 degrees F and grease a rimmed 15×10x1-inch baking dish.
Spoon beans, about a tablespoon, onto tortilla then top half cup mixture of chicken. Fold bottom, then up, then sides and secure it with toothpicks when necessary. Arrange the chimichangas on greased dish with seam facing down. Gently brush them with oil and bake inside preheated oven for 20-25 mins or till golden and crispy, turn at every five mins.
