El Torito’s Black Bean Soup Recipe
Ingredients:
12 ounces of dry blackbeans
2 tsps of oil (olive)
1 c of chopped carrots
2 garlic cloves; minced
1 tsp of dry thyme
1/2 tsp of cayenne-pepper
Cilantro (fresh)
3 Tbsps fresh juice of lime
1 bayleaf
2 tsps of dry orgeano
1 c of chopped celery
1 small onion; chopped
8 c of chicken stock
Instructions:
Rinse blackbeans then discard discolored ones. Transfer into large stockpot then cover w/ enough water then refrigerate soaked overnight.
The following day, drain then put back in stockpot. Heat stock ’til boiling.
Have the oil heated in skillet placed over mid-heat. Add onions, celery, garlic & carrot then saute them for 5 mins ’til tender. Add them to stockpot together w/ thyme, oregano, cayenne-pepper & bayleaf. Simmer w/ cover for 3-4 hrs.
Pour soup into blender then pulse ’til pureed to wanted consistency. Squeeze juice of lime prior to serving then garnish w/ cilantro sprigs. Season w/ pepper & salt.
