Ricotta Tacos – Tacos De Requeson Recipe
Ingredients:
1/3 c of juice (freshly squeezed lime)
Salt (sea, to taste)
1/3 c of radishes; chopped finely
1/4 c of onion (white); chopped finely
1 pc of chile (peron, black); seeded and chopped roughly
or
1 pc of any chile (hot, green); chopped
1 Tbsp of cilantro; chopped roughly
1 c of cheese (Ricotta, lightly salted); drained
6 pcs of toothpicks
6 pcs of thin tortillas (corn, 5-inch)
Safflower oil (for frying)
Instructions:
Place sea salt and (lime) juice inside a bowl then add radish, onion, chile, and cilantro; mix thoroughly. Let it rest for half an hour. Spread a tablespoon Ricotta onto one-half on each of tortillas. Fold it over then secure it with toothpick.
Place oil on a pan, about 1/4-inch up; fry tacos and turn once till all sides are crispy and golden. Do the same to remaining tortillas and add oil when needed. Drain them on a paper towel then transfer on a plate. Carefully open then place two spoonfuls of sauce inside. Serve at once.
