Verde Azzor Recipe
Ingredients:
2 Tbsps of oil (olive oil)
1 c of rice (white)
1/4 c of chopped onions
6 pcs of onions (green); sliced thinly
2 pcs of roasted chiles (Poblano); peeled, seeded, and chopped
1 pc clove of garlic ; chopped finely
1/4 tsp of cumin (ground)
1/4 tsp of salt
1-3/4 c of broth (vegetable)
1/3 c of cilantro; chopped coarsely
Instructions:
Preheat the oven at 375 degrees F. Heat the oil inside an iron-cast wok above moderate heat. Add in rice and cook for two mins till rice becomes opaque; stir constantly. Add onions and cook for one min, while stirring occasionally; add garlic, onions, salt, and cumin then cook for twenty secs.
Add broth then stir thoroughly; let it boil above medium-high heat. Reduce heat and let it simmer for fifteen mins, covered, till rice becomes almost soft. Take out from the heat and transfer on a greased 1-1/2 quart casserole. Bake inside preheated oven for fifteen mins, uncovered, till rice becomes tender.
Serve at once and garnish cilantro.
