Pay De Nuez Pecan Pie Recipe
Ingredients:
1 homemade unbaked pie-crust
1 c of milk
1 eggyolk beaten w/ pinch salt ’til creamy & thick
4 Tbsps of granulated sugar (white)
2 c of pecans; chopped
2 Tbsps of light-brown sugar
1/4 tsp salt
1 lb of finely-chopped dates (pitted)
2 Tbsps of honey
1 tsp of vanilla
4 Tbsps of butter; sliced into four pcs
32 halved pecans
Instructions:
Have your pie plate lined w/ crust then press one foil sheet above to follow shape & covering dough edges. Pour one pound of weight into foil then moound it along edges in order to keep crust’s sides from losing its form.
You place your dough into oven then have it baked for about 20 mins. Remove from oven as well as foil & its weights. Have the crust’s bottom pricked w/ your fork then brush its top & halfway down its sides w/ beaten yolks. Put bake in oven & heat ’til evenly browned about 5-7 mins.
Filling: Place sugars & milk into saucepan then boil. Simmer for approximately 15 mins ’til mixture becomes thick & bubbly. Add dates, pecans, honey & salt. Cook ’til it thickens then add butter ’til melted then blend in vanilla.
Pour mixture carefully into crust then place halved pecabs in 8 lines from center then to sides. Allow to completely cool & then have it refrigerated overnight.
