Huevos Rancheros Recipe
Ingredients:
1 onion (medium); chopped
A can of tomatoes; sliced into small pieces
1 tsp of chili seasoning
4 tortillas (6-inch each)
3/4 c of shredded Monterey-Jack cheese
2 Tbps of oil (olive)
3 Tbsps of diced canned green chili-peppers; rinsed
11/8 tsp of garlic seasoning
8 large eggs
Instructions:
Have onions & garlic sauteed in thick fry pan ’til tender. You add tomatoes, garlic, chili-peppers & chili seasoning. Boil slowly then reduce the heat. Simmer w/o cover for 5-10 mins ’til sauce thickens.
Place the tortillas in bake sheet then lightly brush w/ oil. Have them baked for 8-10 mins at three hundred fifty degrees Fahrenheit ’til bit crisp. Individually break eggs into measuring cups then slide carefully into sauce that’s simmering.
Have dish covered then slowly simmer for 3-5 mins ’til eggwhites set & yolks thickens. Put every tortilla on platters then top w/ two eggs. You spoon over tomato-sauce then sprinkle w/ cheese. Best when served w/ hot-pepper sauce.
