Baked Chimichangas Recipe
Ingredients:
1 whole egg (large); whisked
1 c of tomato (medium); minced
1/8 tsp of cloves; crushed
1/2 tsp of salt
1 tsp of vinegar (red wine)
1/4 c of almonds; slivered
1/4 c of onion; minced
1/4 tsp of cinnamon powder
1 canned green chiles (4 ozs); chopped
Jalapeno sauce (cream)
2 tsps of butter (room temperature)
1/4 c of raisins
8 pcs of tortillas (flour)
1 tsp of chili powder
1 pc of garlic clove; minced
1 lb of grounded beef
Almond sauce (red)
Instructions:
Saute beef and onion until meat is no longer pink. Drain off excess fat. Mix in garlic, raisins, red chiles, cinnamon, green chilis, cloves, salt, red wine vinegar and tomato and egg.
Bring to boil then simmer,lid off for twenty minutes. Mix frequently. Preset oven (500 degrees F). Scoop cooked beef in the middle of your tortillas. Seal all edges by folder each ends overlapping one another as if making an envelope.
Mix together egg with butter then use this to close edges by brushing each tortillas edges. Transfer tortillas in a baking pan then pop in the oven for ten minutes. Best served alongside Almond sauce or Jalapeno cream.
You may opt to deep fry tortillas as well.
