Burritos Con Huevos Recipe
Ingredients:
1-1/2 lbs of steak (flank)
1/2 tsp of pepper (black)
1/2 tsp of salt (seasoned)
2 c of water (hot)
3 pcs of onions (yellow); sliced thinly into rings
1 pc of bell pepper (large); julienned
1 pc of pepper (jalapeno); chopped finely
10 pcs of eggs (large); beaten lightly
2 c of shredded cheese (Cheddar)
2 pcs of tomatoes (large); peeled then chopped
8 pcs of tortillas (flour)
Instructions:
Season salt & pepper on meat. Heat one tablespoon of oil inside a pan and cook seasoned meat, till browned on both sides. Add (hot) water then cover pan tightly. Let it simmer above gentle heat, at about 2-2.5 hours, till meat can be shredded easily, adding more of water if needed.
Once meat softens, shred to small bite-size pieces. Heat two tablespoons of oil inside a skillet then add bell pepper and onions; saute till onions become limp and translucent. Add jalapeno along with tomato then continue to cool for another 3 mins. Add meat, cheese, and eggs; cook like scrambled eggs.
Heat tortillas and fill with mixture of filling and roll. Serve at once with avocado and (sour) cream.
